我国“老字号”中餐企业知识管理战略

随着知识经济的到来，知识已成为塑造和提升餐饮企业核心竞争力的基础；而创意思维和想象力已成为餐饮企业产品开发和创新的手段。当今，餐饮企业已不仅是劳动密集型企业，还是知识密集型企业并成为创意产业之一，其工艺改造、产品开发、市场拓展与顾客满意度的提高及企业的可持续发展管理无一不需要知识管理和创意管理。因此创造学习知识的环境，提高员工的知识和技能水平，将个人的知识向企业知识转化并将知识有效地转化为产品和服务是当前传统的老字号中餐饮企业棘手的问题。本文在通过调查和分析老字号中餐企业面临的经营理念、营销策略、组织结构、管理者素质及产品开发与技术创新等问题及通过中外餐饮业管理方法的对比，提出了加强老字号中餐企业知识管理的战略。

Knowledge Management Strategy of Traditional Chinese Restaurants

Today restaurants are not only the labor-intensive enterprises,but also the knowledge-intensive ones.They have become the creative industry because they use a lot of knowledge management and creative thinking in their production revolution,product innovation,market development,increasing customer satisfaction and their sustainable development.Therefore their most important work in the management of Chinese restaurants with traditional brands in the 21st century is to create an environment for learning,raising the level of knowledge and skill which their employees need and transfer their knowledge and technology into their products and services effectively.The article suggests that the Chinese restaurants with traditional brands will have no alternative but to carry out the knowledge management strategy to solve their difficulties in operation concept,marketing strategy,organization structure,employees diathesis and the innovation of their technology and product based on our investigation and the contrast in operational methods between Chinese traditional restaurants and modern international restaurants.
